Numerous studies continue to find that olive oil enhances health, including protecting the body from heart problems and cancer. One study suggests it also protects the liver.
Researchers from universities in Tunisia and Saudi Arabia separated rats into several groups. Some groups were fed extra virgin olive oil or olive oil extracts, while others served as controls. All rats were then exposed to the herbicide 2,4-Dichlorophenoxyacetic acid, known to deplete antioxidants and cause significant liver damage.

All of the rats showed signs of liver damage, but those who got either whole extra virgin olive oil or an olive oil extract showed an increase in antioxidant activity and a reduction in markers indicating liver damage, showing that olive oil provided partial protection.

"Olive oil is an integral ingredient in the Mediterranean diet," said researcher Mohamed Hammami. "There is growing evidence that it may have great health benefits including the reduction in coronary heart disease risk, the prevention of some cancers and the modification of immune and inflammatory responses. Here, we've shown that extra virgin olive oil and its extracts protect against oxidative damage of hepatic tissue."
